Preheat the Cuisinart

in the open position
to High.
Insert the slicing disc, adjusted to 10mm, into the large work
bowl of the Cuisinart
®
Food Processor. Slice the eggplant,
zucchini, onion, mushrooms and tomatoes into rounds.
Toss veg etab les with the oli ve o il, salt and pep per.
Arrange the eggplant, zucchini and onions evenly spaced on
both sides of the preheated Griddler
®
.
Grill 2 to 4 minutes per side. Add the mushrooms; grill about 1
minute per side. Reserve grilled vegetables on a platter and
reduce the heat to low. Grill the tomatoes, about 30 seconds
per side.
On either a platter or eight individual plates, build the
Napoleons in the following order: eggplant, onion, basil leaf,
goat cheese, tomato, mushroom, zucchini, fi nishing with
another eggplant round.
