Walnut muffins
Preparation time: 95minutes
Makes 12
Ingredients
80g raisins
40 ml rum
120g butter | softened
120g caster sugar
1 ½ tsp. vanilla sugar
2 medium eggs
140 g plain white flour
1 tsp. baking powder
120g walnuts | roughly chopped
Accessories
12-cupmuffin tin with cup 5cm
Paper cases, 5cm
Rack
Preparation
Drizzle the rum over the raisins and
leave for approx. 30minutes.
Beat butter until creamy. Gradually mix
in the sugar, vanilla sugar and eggs. Sift
together the flour and baking powder
and fold in. Stir in the walnuts. Finally,
add the rum and raisins.
Line the muffin tin with the paper cases.
Using 2tablespoons, distribute the
mixture evenly between the muffin
cases.
Place the muffin tin on the rack in the
oven and bake.
