After pre-cooling, a buzzer will sound and a
message is displayed to indicate that the dish
can be put in the appliance cavity.
Function start
At the end of pre-cooling:
1. Open the door
2. Insert the dish into the cavity.
3. Close the door.
4. Touch the CONFIRM button to start the
function.
This stage is indicated by a progressive increase
in the horizontal bar.
BLAST CHILLING
1. Touch the BLAST CHILLING button.
2. Select the type of food to be blast chilled
(e.g. VEGETABLES AND SIDE DISHES
).
3. Select the cut of the food to be blast chilled
(e.g. WHOLE VEGETABLES ).
4. Select the status of the food to be blast
chilled (RAW FOOD or COOKED
FOOD ).
5. Scroll through the values to set the weight of
the food to be blast chilled.
6. Touch the CONFIRM button (at the
right in the lower area) to confirm the
selected value.
7. Touch the START button to start the pre-
cooling stage and subsequent blast chilling
function (see chapter THINGS TO
KNOW).
End of the function
At the end of the function, the appliance
automatically switches to the PRESERVATION
condition and remains in this condition
until the STOP button is pressed.
It is recommended not to introduce food
into the cavity of the appliance during
the pre-cooling stage.
Touch the STOP button to start the
function at any time.
This function allows you to quickly chill
raw or recently cooked foods to +3°C.
After blast chilling, food can be kept in
the refrigerator (+4°C).
Blast chilling stops bacteriological
proliferation and retains the properties
of food.
RAW FOOD : refers to food
that is at room temperature or cold
from the fridge or that otherwise
needs to be cooked and/or
reheated.
•COOKED FOOD : this is
food that has just been cooked and
is still hot.
The state of preservation keeps food at
the correct temperature according to
the function used.
