Sweating Onions
Sweating means cooking the onions in their own juices, with
the addition of a little fat if necessary.
Procedure

Cut the onions into small pieces and place them in a solid
cooking pan with a little butter.

Cover the pan or the dish with temperature- (up to 212° F /
100 °C) and steam-resistant plastic wrap or a lid.

Rendering Fat
Bacon will not brown.
Procedure

Place bacon (diced or sliced) in a solid cooking pan.
