Dry pasta
Dry pasta swells when it is cooked, so it needs to be cooked
in liquid. The liquid must completely cover the pasta. Using
hot liquid gives better results.
Fresh pasta
Fresh noodles and pasta, for example, from the store
refrigerator, do not swell. Fresh pasta should be cooked in a
perforated pan.
Separate any pieces of pasta that have stuck together and
spread them out evenly in the cooking pan.
