½ teaspoon fine sea salt
6 ounces shredded low-fat mozzarella
cheese (about 1½ cups)
4 ounces small-diced pepperoni

Marinara sauce, for serving
1. To a large bowl, add the flour, cornmeal,
sugar, baking powder, baking soda, and salt;
stir to combine. Add the mozzarella and
pepperoni; stir. Put the milk, oil, and egg in a
separate bowl; stir with a whisk to blend. Add
to the dry ingredients and stir until smooth.
Let the batter rest for 5 minutes.
2. Preheat the waffle maker to the desired
setting. The waffle makers ready light will
illuminate green to indicate it is ready to use.
3. Pour about 1 cup batter onto the center of the
lower grid; spread the batter using a heatproof
spatula to within ½ inch of the edge of the
grid. Close the lid; the green indicator light will
turn off. When the green indicator light turns
on again, the waffle sticks are ready. Open the
lid and carefully remove the waffle sticks.
4. Repeat with the remaining batter.
5. For best results, serve immediately. Break
apart into individual waffle sticks and serve
hot. Serve the waffle sticks with marinara
sauce for dipping.

Cornbread Waffle Sticks
Serve Cornbread Waffle Sticks along with soups
or chili. Mix ¾ cup bacon or chives into the batter
for an additional flavor element.

1 cup unbleached all-purpose flour

4 drops vinegar-based hot sauce,

butter, and hot sauce, if using, in a separate
bowl; stir with a whisk to blend. Add to the dry
ingredients and stir until smooth. Let batter
