1. Combine the flour, cocoa powder, sugar,
baking powder, baking soda, salt, and
espresso powder in a large mixing bowl; whisk
to blend. In a large measuring cup or separate
mixing bowl, combine the buttermilk, oil, egg,
and vanilla and whisk to combine. Add to the
dry ingredients and whisk until smooth. Fold in
the morsels.
2. Preheat the waffle maker to the desired
setting. The waffle makers ready light will
illuminate green to indicate it is ready to use.
3. Pour 1 scant cup of batter onto the center of
the lower waffle grid. Close the lid; the green
indicator light will turn off. When the green
indicator light turns on again, the waffle is
ready. Carefully open the waffle maker and
remove the waffle sticks. Break apart into
individual sticks. Repeat with the remaining
batter.
4. To serve, set out six dessert plates or bowls.
Place 2 waffle sticks on each plate and then
evenly divide the bananas, ice cream, walnuts,
hot fudge, whipped cream, and cherries to
build each sundae. Serve immediately.

cups unbleached all-purpose flour

cup yellow cornmeal
1 tablespoon granulated sugar
1½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon kosher salt

cup buttermilk

cup club soda*
2 large eggs
6 tablespoons unsalted butter, melted
and cooled slightly
½ cup sliced pickled jalapeño peppers,
drained
1 cup shredded sharp Cheddar cheese,
preferably yellow
Spreadable cream cheese and maple
syrup, for serving
1. In a large bowl, whisk together the flour,
cornmeal, sugar, baking powder, baking soda,
and salt. In a separate bowl, whisk the
buttermilk, club soda, egg, and butter to
combine. Add the liquid ingredients to the dry
and whisk until smooth.
2. Preheat the waffle maker to setting 4, or a
higher setting for crisper waffles. The waffle
maker’s ready light will illuminate green to
indicate it is ready to use. Pour 1 scant cup of
batter onto the center of the lower waffle grid.
Spread the batter using a heatproof spatula to
within ½ inch of the edge of the grid. Top the
batter with 2 to 3 tablespoons of jalapeños
and 3 to 4 tablespoons of the Cheddar. Close
the lid; the green indicator light will turn off.
When the green indicator light turns on again,
the waffle is ready. Open the lid and carefully
remove the baked waffle sticks. Break apart
into individual sticks
3. Repeat with the remaining batter.
4. For best results, serve waffle sticks
immediately with a schmear of cream cheese
and maple syrup, if desired.
*The carbonation in club soda aerates the batter and
makes the finished waffles extra light.
