10.5. Fat-free sponge cake
Ingredients
100g of white wheat flour without raising agent
100 g of cornmeal
3 g of baking powder
150 g of granulated sugar (max. grain size 0.3mm)
3 eggs (55 - 60 g with shells)
30 ml of warm water (approx. 45°C)
Preparation
Beat the egg white together with the warm water until you have produced a
firm mixture. Add the sugar and the egg yolks and beat the mixture for a further
2.5 minutes. Mix in the wheat flour, cornmeal and baking powder and fold it
carefully into the egg and sugar mixture.
Place greaseproof paper on the bottom of an ungreased cake tin (diameter
approx. 26 cm, height approx. 6.5 cm). Pour the mixture into the tin and
distribute it evenly. Make sure that you follow the instructions about achieving
an even height of the mixture for this type of cake.
Preheat the microwave to 155°C in convection mode. Place the grill rack with
the feet facing upwards onto the rotary plate. Now place the cake tin into the
microwave. Position the cake as near to the middle of the oven as possible and
start the baking process in convection mode. Baking time: approx. 30 to 35
minutes

Ingredients
170 g of fine white flour with a low gluten content
170 g of white granulated sugar
10 g of baking powder
100 g of water
50 g of margarine with a fat content of approx. 80%
2 – 3 eggs (125 g whisked egg)
For baking: baking paper with a diameter of approx. 200 mm.
