Zucchini battered fries
Prep 10 minutes, Cook 4 minutes
Makes 4 side portions
500g zucchini, rinsed, top and tailed
150g plain flour
10 g baking powder
100g cornflour
150ml cold soda water
Vegetable oil, for deep frying
Salt, to taste
1. Place bowl onto machine base, insert the spindle
and attach the Julienne Cutter. Attach lid.
2. Feed zucchini through small or medium
feed chute.
3. Place plain flour, cornflour and baking powder
in a medium size mixing bowl and mix flour to
combine. Add soda water and whisk until just
combined.
4. Place oil in a large saucepan or deep fryer and
heat to 180C°. Dip zucchini in batter and shake to
remove excess. Gently lower zucchini into oil and
fry for 3-4 minutes or until golden.
Potato salad
Prep 15 minutes, Cook 15 minutes
Makes 6 side portions
1kg round red or white potatoes (about 8 medium),
peeled
4 hard-cooked eggs, quartered or chopped
2 medium stalks celery
1 small red onion, peeled
1 cups mayonnaise
2 tablespoon cider vinegar or white wine vinegar
1 teaspoon Dijon mustard
L cup chopped herbs (parsley, tarragon, chives)
Coarse salt and freshly ground pepper, to taste
1. Peel the potatoes using the food processor potato
peeler. Rinse and drain the potatoes.
2. Using the 12mm dicing kit feed the potatoes one
at a time into the chute and use the pusher to
apply even pressure. Once all the potatoes are
diced place in a pot with cold salted water. Bring
to the boil and cook on the stove until just tender.
Once cooked strain and run under cold water.
Allow potatoes to drain and cool completely.
3. Meanwhile rinse the food processor bowl and
assemble the 8mm dicing kit. Feed the celery and
then the onion into the chute using the pusher to
apply even pressure.
4. Mix the mayonnaise, vinegar and mustard.
If the mayonnaise is very thick you can add a
tablespoon of water.
5. Mix all ingredients together and season with salt
and pepper.
Tips:
You can substitute the Dijon mustard for hot
English, seeded or yellow mustard.
For something different try adding sliced red radish
for a little peppery crunch or fresh peas and beans.
