PEANUT BUTTER HUMMUS WITH RED CAPSICUM
Preparation Time:
5 minutes
Ingredients:
½ tsp salt
¼ tsp ground black pepper
400 grams canned chickpeas, drained and rinsed
2 tbsps creamy peanut butter
2 tbsps lemon juice
1-2 tbsps water
1 tbsp olive oil
3 fresh red capsicums, cored, seeded, sliced and chilled
Method:
1. Using the large work bowl, insert the S Blade and add all the ingredients except the red
peppers.
2. Process the mixture on HIGH (speed 3) for about 1 minute, scraping down the bowl if
needed, until the mixture is very smooth. Taste and adjust seasonings.
3. Serve with chilled red pepper strips.
