the final 10 minutesof cooking. Keepin mind, use of
excessivesaucesorglazes will also requireextra cleaning
afterwards.

dry rubcanbe used prior to cooking. Meatcan be either
soakedor injectedwith liquidmarinade up to 24 hoursprior
to grilling. Dry rubs canbe applieddirectly to the meat
immediatelybefore grilling.
Wood Chips
For extrasmokeflavor when grilling, try adding wood
chips. Soak the chipsinwater for approximately30
minutesbeforeadding to a smokeboxor pan. Place
smoke boxor panon top of thecooking grate abovethe

kabobs. Woodenskewersshould be soakedinwater for
an hour before use,and are best usedfor quickcooking
foods suchas vegetablesand fruits.
Utensils
Usetongs or a spatulato handlethe food insteadof a

the meat,and may
causeflare-ups.
