COCONUT, PEAR & WALNUT DESSERT WAFFLES
Top these delicious wafes with fresh whipped cream, pear slices and toasted coconut.
Makes: 4 wafes
• 1-1/4 cup cake our
• 1/3 cup coconut our
• 1/2 cup toasted walnuts
• 3 teaspoons baking powder
• 1/2 cup toasted coconut,
plus more for topping
• 3 eggs separated
• 1/3 cup melted butter
• 3/4 cup vanilla almond milk
• 3/4 cup fresh ripe pear, seeded,
chopped, plus slices for topping
For garnish
• fresh whipped cream
1. Preheat Wafe Maker.
2. Add all dry ingredients to a large bowl.
3. In a separate bowl beat egg whites until stiff peaks form.
4. In a third bowl, combine egg yolks, melted butter, almond milk and fresh pear.
5. Pour wet ingredients into dry ingredients and mix by hand until blended. Fold in egg whites.
6. Bake wafes until golden brown, about 6 minutes.
