For best results
Dry most fruits and vegetables at 140°F. Dry
herbs at 100°F.
Drying times vary depending on the moisture
and sugar content of the food, the size of the
pieces, the amount being dried and the humidity
in the air.
Treat fruits with antioxidants to avoid discoloration.
Tightly woven cooling racks can be used to allow
the air to circulate around the food; or use drying
racks to allow the air to circulate around the food
(this type of oven rack is not supplied with this
appliance).
Consult a food preservation book or library for
information.
