risen in the middle but is

of the springform cake
tin.

the baked item care-

Small baked items stick
to one another when they
are baked.

2cm between each

This allows enough
space for the baked
items to expand well
and brown on all
sides.
Your baked item is too
light in colour overall.
¡ Check the shelf posi-
tion and accessory.
¡ Increase the baking
temperature.

cooked properly in the
middle.

temperature and in-
crease the baking
time.
¡ Add less liquid.
For cakes with a moist
topping:
¡ Pre-bake the base.
¡ Sprinkle the baked
base with almonds or
breadcrumbs.
¡ Place the topping on
the base.
Your baked item will not
come out of the tin when
turned upside down.
¡ Allow the cake to cool
for 5-10minutes after
baking.
¡ Use a knife to carefully
loosen the edge of the
cake.
¡ Turn the cake tin up-
side down again and
cover it several times
with a cold, wet cloth.
¡ Next time you bake,
grease the baking tin
and sprinkle it with
breadcrumbs.
20.9 Bakes and gratins
You can use your appliance to cook bakes and gratins.
Tips for cooking bakes and soufflés
¡ How well cooked a bake is depends on the size of
the cookware and the depth of the bake. Use an
ovenproof dish that is 4 to 5cm deep for bakes and
gratins. Food takes longer to cook in deep, narrow
cookware and it browns more on top.
¡ Use heat-resistant, microwave-safe cookware.
¡ Use the indicated shelf positions.
¡ Leave bakes and gratins to cook in the oven for a
further 5minutes after the oven has been switched
off.
