havebeencarefullyfollowed.The
processtimewillbeshortenedby:
(1)usingapressurecanner,and
(2)startingwithH~ tapwaterfor
fastestheatingoflargequantitiesof
water.
CAUTION:
Safecanningrequiresthat
harmfulmicroorganismare
destroyedandthatthejarsare
sealedcompletely.When
canning
foodsina waterbathcanner,a
gentlebutsteadyboilmustbe
maintainedcontinuouslyforthe
requiredtime.Whencanning
foodsina pressurecanner,the
pressuremustbemaintained
continuouslyfortherequired
time.
Ifa soliddiskelementisusedfor
canning,pleasenotethatsolid
diskelementsheatupandcool
downmoreslowly
thanother
conventionalelements.Because
ofthis&Mference,afteryouhave
adjustedthecontrolsitisvery
importanttomakesurethe
prescribedboilorpressure
levelsaremaintainedforthe
requiredtime.
Thesoliddiskelementshave
temperaturelimitersthathelp
preventdamagetothecooktop.
Ifthebottomof
yourcanneris
notflat,thesoliddiskelement
canoverheat,triggeringthe
temperaturelimiterstoturnthe
unitoffforatime.Thiswillstop
theboilorreducethepressure
inthecanner.
Sinceyoumustmakesureto
processthecanningjarsfor
theprescribedtime,wi~hno
interruptioninprocessingtime,
youcannotcanonsoliddisk
elementsifthebottomofyour
cannerisnotflatenough.
