BAKED MEXICAN STREET CORN
Also called elote, this favorite street food is usually quickly
charred on a grill, but with the Food Mover™ the corn slowly
cooks to caramelized perfection while you relaxedly get the
rest of dinner together.
1. In a small bowl, combine the salt, chili powder, and cayenne.
2. Coat the corn with the butter.
3. Using the Eject button to move the conveyor belt along,
distribute the corn over the conveyor belt so that it’s evenly
spaced.
4. Set to bake at 375˚F for 50 minutes. (The corn will be in the
Food Mover™ during preheating.)
5. Bake until the corn is browned in spots. Transfer to a rimmed
platter.
6. Season the corn all over with the chili powder mixture.
Sprinkle with the cheese and the cilantro and serve
immediately with lime wedges.
1 Tbsp kosher salt
1 Tbsp chili powder
tsp cayenne
6 small ears of corn,
shucked
3 Tbsp unsalted butter, at
room temperature
cup crumbled Cotija
or queso fresco
2 to 3 Tbsp chopped
fresh cilantro
Lime slices or wedges,
