GARLIC AND HERB FOCACCIA
Focaccia, with its airy crumb and crisp crust, is delicious plain,
but add fragrant thyme, rosemary and garlic, and it becomes
simply irresistible. Bonus: Your kitchen fills with the most
amazing aroma as you make this Italian favorite.
1. Combine the olive oil, garlic, thyme, rosemary, and pepper
in a small saucepan; heat on low until just warm, about
5 minutes. Set aside off the heat.
2. In a large bowl, combine the water, yeast, and honey; let
activate for 5 minutes. Add 1 cup of the flour and ¼ cup of
the flavored oil (including any herbs or garlic) and stir until
just moistened.
3. Add in the remaining 1 ½ cups of flour and the salt and knead
until combined; the dough will be sticky.
4. Lightly grease a large bowl. Transfer the dough to the bowl
and cover with plastic wrap. Let rise in a warm place for
1 hour.
5. Transfer the dough to a 9x13-inch baking pan, pressing to
stretch it evenly fit the whole pan. Using your fingers, press
the dough all over to create dimples.
6. Drizzle the top with the remaining flavored oil. Garnish with
the thyme sprigs and rosemary leaves, and sprinkle with
flaky salt.
7. Set the Food Mover™ to Bake at 450˚F for 19 minutes. When
preheating has finished, insert baking pan all the way into
unit and close the door.
8. Bake until the focaccia is golden brown. Let cool briefly
before slicing and serving topped with additional sea salt,
if desired.
