#1 How do I turn off the annoying musical chimes on this model?

To turn the sound on/off, you must press and hold the clock button for 3 seconds to enter the settings mode. From there, press the number "6" on the keypad to select the "sound" option. Then press "1" to turn the sound on and "2" to turn it off. Then you must press "START/SET" to save the changes.

#2 When does the fan run in the bank of the oven? Also how well does the air fryer work compare to separate counter top model?

The convection fan will run anytime you use the Convection Bake cooking cycle. This will allow the heat to be spread through the oven at a more evenly temperature to cook for faster cooking. Same for the Air Fry. This will allow for faster cooking and save space on your counter tops by not having two machines. This way you have multiple cooking methods located right at your finger tips without out having to pull out other devices.
