Steam- assisted roasting, braising and grilling
Certain foodstuffs become crispier during steam-
assisted cooking. Their surface becomes glossier and
they dry out less.
Use cookware without a lid. Cookware must be heat-
and steam-resistant.
The roast does not have to be turned.
Use steam-assisted cooking if it is indicated in the table.
Some dishes turn out best if they are cooked in several
stages. These are indicated in the table.
