notrecommended.However,when
canningwithwater-bathor pressure
canner,large-diameterpotsmaybe
used.Thisisbecauseboilingwater
temperatures(evenunderpressure)
arenotharmfultocooktopsurfaces
surroundingheatingunit.

LARGEDIAMETERCANNERS

COOKWAREFORFRYINGOR

THANWATER.Mostsyrupor
saucemixtures—andalltypesof

doesnotallowcannertobe
centeredonsurfaceunit,use
smaller-diametercontainersfor
goodcanningresults.
3. Flat-bottomedcannersgivebest
canningresults.Besurebottomof
cannerisflator slightindentation
fitssnuglyoversurfaceunit.
Cannerswithflangedorrippled
bottoms(oftenfoundinenamelware)
arenotrecommended.
