When turning tile meat over, always use
a spatula as it will not puncture the meat
allowing the juices to run out. This will hel I)
to keep the meat juicy. Turn the meat only
once, as juices are lost when the meat is
repeatedly turned. Season or salt tile meat

Remove tile cover befi)re turning tile griddle on.
The griddle is made fl'om Type 304 stainless
steel and highly polisbed to provide a smooth
cooking surtace. It is normal fl_r it to darken
with use as oils cook onto the surthce to
provide a stick-resistant base or "seasoning."
The griddle is themlostatically controlled
and cycles on and ott' to maintain tile set
temperature. A light will glow to indicate
the griddle is on.
The griddle assembly should not be removed
for clealfing.
Once tile trait is in position, tile rear center
shil)ping sci'ew can be i'emoved. It is located
beneath the griddle title cover. Remove the title
cover by litiing it straight up. Be careflfl not to
scratch the backguard during remowd of the
lille covet'.
Tile two outer screws are leveling screws.
Do not remove these two screws. Thev can be
turned to level tile griddle or to provide a
torward slope to hel I) grease and oils to drain
awav fl'om tile tood being cooked. Atier using
tile griddle a few times you will be able to judge
the slope best tot the toods VOlt are cooking
and vom" personal preference.
When replacing file g_'iddle flue cove_, ensm'e
that the cover slips to the outside of the fl'ont and
back metal flanges of the fixed griddle assembly.
This will ensm'e a tight fit of the flue cover.
