Operation
43
The duration required depends on:
- the initial temperature of the food.
Food taken straight from the
refrigerator takes longer to heat or
cook than food which has been kept
at room temperature.
- the type and texture of the food.
Fresh vegetables contain more water
and cook more quickly than stored
vegetables.
- the frequency of stirring or turning
the food.
Frequent stirring or turning heats the
food more evenly, and it is therefore
ready in a shorter time.
- the amount of food.
As a general rule, allow almost
double the time for double the
quantity
and for a smaller quantity, shorten
the duration accordingly.
- the shape and material of the
container.
