The Convect Pastry cycle is best for one-, two- or three-rack
baking of foods such as cream puffs, turnovers and croissants.
Proof prepares dough for baking by activating the yeast. Dough
should be fresh or thawed.

Reduce recipe temperature by 25°F (14°C) for this cycle.
To Use Convect Pastry:
Before using Convect Pastry, see the "Positioning Racks and
Bakeware" section and the following tips for rack positions.
NOTE: An "o" after the rack position number indicates that the
offset rack should be used. An "f" indicates that the flat rack
should be used, and an "r" indicates that the roll-out rack should
be used.
Rack positions for 27" (68.6cm) ovens
1-rack baking: 20
2-rack baking: 20 and 3r
3-rack baking: lf, 30 and 4r
Rack positions for 30" (76.2 cm) ovens
1-rack baking: 3f
2-rack baking: 2f and 4r
3-rack baking: lo, 3f and 5r
1. From the Select Mode menu, press the quickset pad next to
the MultiMode ®Convection option.
2. From the MultiMode ®Convection menu, touch the MORE
button until Convect Pastry appears. Press the quickset pad
next to it.
3. From the Temperature screen, use the number keypad to
enter a desired cooking temperature. The temperature must
be between 170°F (77°C) and 550°F (288°C) or an invalid key
alert occurs and the default temperature appears on screen.
4. Press START to begin preheating oven or select Set Cook
Timer to set the cook time and access Keep Warm and Delay
Start functions.
5. For cook timer, enter a cooking length using the number
keypad to set a timer to alert you when cooking ends. The
time length cannot exceed 12 hours. See the "Cook Timer"
section for additional information.
6. (Optional) To keep food warm after cooking ends, select ON/
OFF for Keep Warm when done. See "Keep Warm" section
for additional information.
7. (Optional) To set a delayed start, press Delay Start and set the
desired time. See the "Delay Start" section for additional
information.
8. Press START to begin preheating oven.
9. Place food in oven when preheat signal sounds. The screen
will also prompt you when to insert food.
10. Press CANCEL OVEN (CANCEL UPPER or CANCEL LOWER,
on double models) to turn off the oven.

To Proof:
Before first proofing, place dough in a lightly greased bowl and
cover loosely with wax paper coated with shortening. Use rack 2f
(flat rack).
Close door.
1. Place food in oven.
2. From the Select Mode menu, touch the MORE button until
Proof appears. Press the quickset pad next to it.
3. The oven is set to 100°F (36°C). It is not possible to change
the temperature in Proof mode.
4. Press START to begin proofing. Preheating the oven is not
necessary.
5. Press CANCEL OVEN (CANCEL UPPER or CANCEL LOWER
on double models) to turn off the oven.
Before second proofing, shape dough, place in baking pan(s) and
cover loosely with plastic wrap coated with cooking spray. Follow
same placement, and control steps above. Before baking,
remove plastic wrap.

Rapid Proof is used for frozen or formed dough. A preheat is
required for this mode.

To Use Rapid Proof:
1. From the Select Mode menu, touch the MORE button until
Rapid Proof appears. Press the quickset pad next to it
2. The oven will heat to a default temperature of 200°F (93°C).
The temperature can be changed by using the number
keypad to enter a desired temperature. The temperature must
be between 170°F (77°C) and 200°F (93°C) or an invalid key
alert occurs and the default temperature appears on the
screen.
3. Press START to begin preheating the oven.
