Instructions
◆ 1 cup boiling water
◆ 3 cups wheat bran*, divided
◆ 1 cup boiling water
◆ ½ cup butter or margarine
◆ 2 cups buttermilk
◆ 2 eggs beaten
◆ 1 cup granulated sugar, divided
◆ ½ cup brown sugar,
firmly packed
◆ 2 ½ all-purpose flour
◆ 2 ½ teaspoons baking soda
◆ 1 cup chopped dried apple,
dates, raisins, or pineapple
◆ ½ cup chopped walnuts
or pecans
*Optional: Substitute 1 cup oat bran for wheat bran for an oat taste.
Place cupcake paper liners in pans,
then generously spray inside of liners
with cooking spray.
Preheat oven to 400°F (204°C)
In large, heat proof bowl, pour boiling
water over 1 cup wheat bran and let stand
for 15 minutes.
Add butter or margarine to bran water
mixture, whisking until mixed.
Stir in buttermilk, eggs, ¾ cup of
granulated sugar, brown sugar and
remaining 2 cups wheat bran. Set aside.
Combine dry mixture with wet mixture
and stir until dry ingredients are moist.
Do not over mix.
Scoop batter evenly into prepared pan.
Sprinkle remaining ¼ cup of sugar on top
of each.
Allow to cool for 10 minutes, remove from
pan and cool completely on cooling rack.

flour, baking soda, and salt. Add chopped
dried fruit and combine.

inserted comes out clean.
