1 LARGE GARLIC CLOVE, CRUSHED
THROUGH A GARLIC PRESS
2 TEASPOONS EXTRA-VIRGIN OLIVE OIL
1 TEASPOON GRATED LEMON ZEST
11/2 TABLESPOONS FRESH LEMON JUICE
3/4 TEASPOON KOSHER SALT
1/4 TEASPOON FRESHLY GROUND BLACK PEPPER

Grate the cucumber over the large holes of a box
grater, place in a clean kitchen towel and
squeeze out most of the water.
Transfer the cucumber to a medium bowl. Stir in
the yogurt, dill, garlic, oil, lemon zest and juice,
salt and pepper. Cover and refrigerate for up to 2
hours before serving.
