#1 Do you need to drain the oil after every use? If not, how long can you leave the same oil in the fryer?

The "cool zone" concept actually works. I had a DeLonghi fryer where the bottom of the oil container was the heating element and experienced a lot of bread crumbs / breading turning black quickly. Get a gallon container, when the oil is cool enough to handle but not cold, pour oil into container through a screen seive, wipe out oil pan, pour oil back in through the sieve and you're good to go. If you're concerned about the container not being air tight, a couple pieces of cling film over the top solve that, just remove before next use. Can use 10 or 20 times before replacing oil depending on what you are frying and if you strain after cooking and remove residue. Great fryer.

#2 How does custom setting work?

The Breville® BDF500 Smart Fryer™ CUSTOM cooking mode has a default setting of 5:00 minutes and 320°F. This can be changed by turning the SCROLL/ SELECT knob to CUSTOM and then changing either the time or temperature or both.

#3 How many times can you reuse the oil? How do you store it?

Answer:It all depends on what you will be frying. I use peanut oil and reuse it 2 to 3 times. I let it cool and then drain it back into original container, it holds one gallon. I normally decide on reuse by color and fragrance. You will not have to worry about any burn with this unit. It does a fabulous job.
