I see one (1) recipe for gluten free brown rice bread in booklet enclosed. I am still working thru the recipes trying to get a decent 1 lb. loaf including using recipes from other books. Perhaps a small loaf of good bread is not a reality.

I do whole wheat and sourdough all the time. I rarely make plain white. Regarding sourdough, if you don’t want to keep your own starter, buy the sourdough bread mix from Krusteaz. They have a Receipes for the one pound loaf right on the box. Each box “almost” makes 2 loaves. Have used them for years.

It does have a dough cycle. If you prepare the dough, you can pull it out, shape it however you want, let it rise a 2nd time, and bake it in your oven.
