ChemicalsforCleaningandSanitizinganIce‐O‐MaticCommercialIceMachine
Thecleaningandsanitizingofanycommercialicemachineareimportantproceduresalloperatorsneedtohavein
theirpreventivemaintenanceprotocol.Whilesimilar,thesetwoproceduresareuniquelydifferentand
accomplishdifferentthings.Cleaningorde‐liming,dissolvesthemineraldepositsontheevaporatorandremoves
scale,calciumandothermineralbuildup.Sanitizingdisinfectsthemachineandremovesmicrobialgrowth
includingmoldandslime.
Ineithercase,itisimportanttousesolutionsthatdonotharmtheicemachine.Neverusecleaningorsanitizing
solutionsthatcontainNitricAcid,SulfuricAcid,HydrochloricAcid,CarbolicAcid,AceticAcid,dilutedAceticAcidor
non‐food‐gradevinegar(concentrationofaceticacidgreaterthan6%anddoesnotcontainenzymescreatedin
processing)orbleach,chlorinedioxide,orsaltssuchaspotassiumchloride(potassiumsalts)orsodiumchloride.
Checkthelabelorthemanufacturer’sMaterialSafetyDataSheet(MSDS)tobesure.Thesechemicalscanattack
thesurfaceoftheevaporatoraswellasothermetalcomponentscausingcorrosionandflaking.ReverseOsmosis
(RO)watercanbeveryacidicandcanattacktheevaporatorandothermetalintheicemachine.BecausetheRO
processremovesallmineralsandmetalsfromthewateritcanpromotethefastergrowthofmicrobial,moldand
slime.IfROwaterisused,thenIce‐O‐MaticrecommendsthewaterpHisverifiedtobeaneutral7.0tominimize
thecorrosiveeffects.Incorrectcleaners,sanitizers,andROwaterthatdoesnothaveaneutralpHcouldvoidthe
machine’swarranty.

Ice‐O‐Maticrecommendssanitizingordisinfecting
anicemakeraminimumofeverysixmonths,but
nomorethanoncepermonthtoavoidpotential
damagetothemachine.Frequencyofsanitizing
maydependonwhetherthemachineisinahigh
yeastenvironmentorifROwaterisbeingused.It
istheresponsibilityoftheoperatortodetermine
theoptimalfrequencyfortheirparticular
environment.
Ice‐O‐Maticrequiresa“nickel‐safe”sanitizersuch
asNu‐CalgonIMS‐III.Sanitizingisasimplematter
ofrunningtheapprovedsanitizerthroughtheice
machineandwipingdownsurfaceswiththe
sanitizer.Inaddition,forCIMmodelsrevision4
andhigher,KAY‐5®Sanitizermayalsobeused.
Ifbeingdoneatthesametimeasthecleaning
process,sanitizingmustbedoneafterthe
cleaningprocess.Chemicalsusedforsanitizing
mustbethoroughlypurgedandrinsedafteruse.
FollowtheprocessasprescribedintheInstallation
andServiceManuals.
Note:thisprocessrequirestheiceberemoved
fromthebin.
Ice‐O‐MaticIceMachineCleaning
Cleaningorde‐liminganicemachinereferstotheprocess
ofremovingmineralbuildupandscalefromtheevaporator
andothercomponents.Ice‐O‐Maticrecommendscleaning
theicemachineevery6months,butnomorethanonce
permonthtoavoidpotentialdamagetothemachine.
Frequencyofcleaningmaydependonwaterqualityand
filtrationsystemused.Itistheresponsibilityofthe
operatortodeterminetheoptimalfrequencyfortheir
particularenvironment.Cleaningwillnotremove
microbial,mold,orslime.Themachineshouldalwaysbe
sanitizedaftercleaning,andchemicalsusedforcleaning
mustbethoroughlypurgedandrinsedpriortosanitizing.
