#1 Can this be mounted flat (laying down) I want to put it into an RV and I have limited room... Also can you use a wall switch to provide power to the unit when you need to use it ?? Like a temporary on/off switch.

Yes, as long as it is fixed well and has a stable 220-240V AC output.

#2 Do you need a regular water tank also?

No, a regular water tank is not needed.

#3 Does the 8kw tankless water heater come back on after a power outage or do you have to manually power it on at the unit? Planning on putting it in the attic and do want to go in the attic everytime there's a power outage.

When the machine is working, if the power is suddenly cut off, it can resume normal operation after being powered on. The chip has a memory function.
