Blueberry Wafes
• 1 1⁄2 cups Mix Wafe Base
• 4 tbsp. melted butter
• 2 eggs
• 1⁄2 cup buttermilk
• 1⁄4 cup blueberries
1. In a mixing bowl, combine all ingredients and whisk until mixture is smooth
and contains no lumps.
2. In preheated wafe iron, add in about 2 tablespoons for each wafe and cook until
wafes aregolden brown (about 3-4 minutes).
TIP: Top with sliced strawberries for a berry-delicious breakfast!
Light & Crispy Gluten-Free Wafes
• 1/2 cup certied gluten-free brown rice
our
• 1/4 cup certied gluten-free chickpea our
• 1/4 cup certied gluten-free tapioca our
• 3/4 teaspoons baking powder
• 1 teaspoon pure vanilla extract
• 1/4 teaspoon ne salt
• 1/2 cup milk
• 1/4 cup vegetable oil
• 1 large egg, separated
• 2 tablespoons organic agave nectar
• Soft unsalted butter and syrup,
w for topping
1. In a large bowl, whisk rice, chickpea and tapioca ours together.
Add baking powder, vanilla and salt in a large bowl.
2. In another bowl, whisk milk, oil and egg yolks.
3. Use a 3rd bowl to beat egg whites and sugar until soft peaks form.
4. Pour the wet ingredients into the dry, gently stirring until just incorporated.
Do not overmix, some lumps are ok.
5. Fold in the beaten egg whites.
6. Lightly brush the top and bottom wafe plates with oil.
7. Spoon 2 tablespoons wafe batter into the center of the wafe plate;
use a spatula to spread batter to edges and close and lock lid.
8. Bake 3 to 4 minutes or until the wafes are golden brown.
9. Serve with butter and your favorite syrup.
Whole-Grain Apple Wafes
• 1/4 cup cornmeal
• 1/4 cup buckwheat our
• 1/2 cup brown rice our
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup nonfat plain yogurt
• 2 eggs
• 2 tablespoons water
• 1 tablespoon canola oil
• 1 teaspoon vanilla extract
• 1 cup diced red apple
1. In a large bowl, combine cornmeal, buckwheat and brown rice ours,
baking powder, baking soda and salt.
2. In a separate bowl, whisk together yogurt, eggs, water, oil and vanilla.
Add to dry ingredients. Stir in apples.
3. Lightly brush the top and bottom wafe plates with oil.
4. Spoon 2 tablespoons wafe batter into the center of the wafe plate;
use a spatula to spread batter to edges and close and lock lid.
5. Bake 3 to 4 minutes or until the wafes are golden brown.
