I had no problems with the plastic parts. They are ok. But, concerning health, I don't know if they are ok, or if those parts have problem with emissions of harmful substances.

Pre spray the surface and base of the paddle with (PAM or the like) and when I'm finished I usually let it soak in soapy water while I'm eating. I use it for wings, stir fry and many other types of dishes but wings tend to clog the paddle most. hope this helps!

Yes, you can coat the chicken and cook them, but I would recommend a snacking grid, which you can order from the t-fal website for a better frying result, because the rotating paddle might break the coat and the chicken will stick together without using a snacking grid. 
