Is there an IR extension
Yes. The remote is both IR and Bluetooth (BT). The remote will function as an IR remote until Google assistant is connected (BT), after the remote is connected through BT, then only the power button will function as IR, the rest of the buttons will work on BT.
Where is the quick start guide to locate the manual on/off
How can subtitles be turned on
You will find settings and options for closed captioning by going to Home>Settings>Accessibility. For an external device, like a cable box, or streaming app, you would want to use the closed caption settings that are controlled by the individual device/app.
