    How can I set the clock on the correct time? I couldn’t find it in the manual that I have.

    Use the bottom knob (temperature), push it in for a few seconds, release, and wait, the hour side will flash, turn the bottom know to the number you want. Then push the knob again as above to set the minutes. When you have the hour and minutes set where you want push the little start/cancel button to set/start your clock.
