You probably could use a vitamixer. To be honest, I don't really like this machine bc the lid fits funny- I've exchanged it for another one and still have the same problem. My brother has a vitamixer and says it makes everything. You could probably even use a regular blender and just add ice, creamer, Baileys, and already brewed coffee.

No, it's a frappuccino machine, not an espresso machine. You can use espresso grounds and blend it without using ice I guess, but that won't make a quality hot latte. It makes really good cold drinks.
