Placethebowlontothemotorbaseandgentlyturnunlthebowldropsdownontothe
drivesocket.
Placethedoughscraperdownintothesmallerholelocatednearthetensionknob②.
Toaachthedoughroller,loosenthetensionknob,allowingthearm①toswingoverthe
topofthebowl.Pulluponthepin③,posiontherollerunderthearmandpushthepin
downintothecenteroftheroller.Gentlyallowthearm/rollertoreturntothesideofthe
bowl.Whenkneadingdough,lockthearmandrollerawa
yfromtherimofthebowlby
pullingthearmtowardsthemiddleofthebowlandghteninginplaceusingthetension
knob.

Placethebowlontothemotorbaseandgentlyturnunlthebowldropsdownontothe
drivesocket.
Placethedoughscraperdownintothesmallerholelocatednearthetensionknob②.
Toaachthedoughhook,fitthedoughhookintothelargerholelocatednearthetension
knob.Loosenthetensionknob,allowingthearm①toswingoverthetopofthebowl.
Pulluponthepin③andgentlypushdownintothesloton thesideofthedoughhook.
Tight
enthetensionknobsothatdoughhookislockedinthecenterofthebowl.When
kneadingdoughwiththedoughhook,youdonotwantthehookmovinginsidethebowl.

DoughMixing:Usetherollerandscraper foryeastdoughrecipeswithhigherhydraon.
Startthemachineonthelowestspeedwiththedoughrollerresngagainsttherimofthe
bowl.Startwithyourliquidingredientsandthenslowlybeginaddingyourflour.Asthe
doughthickens,adjusttheroll
erawayfromthesideofthebowlandlockinplaceusingthe
tensionknob.Thedistanceoftherollerfromtherimofthebowlisdeterminedbythe
amountofdoughyouaremixing.Youwillwanttherollertoapplygentlepressuretothe
doughasitpassesbetweentherol
lerandthesideofthebowlbutdonotwanttheroller
tooclosethatitpushesthedoughupandoutofthebowl.NOTE:When“locking”the
arm/rollerinplace,thearmissllabletomovetowardsthecenterofthebowl.Ifthe
amountofdoughinth
ebowlbeginsmovingthearm/rollerbackandforthtooharshly,
reducethespeedandadjusttherolleralilefurtherawayfromthesideofthebowl.
Followspecificrecipeforkneading speedandme.
CreamingBuerorMargarine:PlaceROOMTEMPERATUREbuerormargarinewith
sugarin tothebowl.Therollershouldberesngagainsttherimofthebowl.Startmachine
onlowandslowlyincreasespeedtoahigh/medium(about6o’clockonthespeedknob).If
