#1 Can you use this for skittles?

I believe what you are referring to is a freeze dryer for freeze dried skittles. That is a different type of machine. It is made by Harvest Right and costs between 3-5 thousand dollars depending on the size and options. It is a different process. This is a dehydrator.

#2 Is there some type of mesh lining to prevent the seeds from falling through the holes?

Yes, there are plastic sheets available that have small holes. I purchased them separately.

#3 Could this be good tondehydrate chicken heart, duck hearts ect? For dog treats

I've never tried this, but I have done turkey breast jerky, so I imagine it would work. Might have to shorten or extend the time (I normally do thin strips of turkey for 5 to 6 hours) depending on the thickness of the hearts.

#4 Can you use this for nuts and seeds?

Yes. I have used it to dehydrate nuts. For small seeds I think you will need plastic mesh to keep the seeds from falling through.

#5 The fruit roll sheet is for the bottom? Needs to be there every time I use the machine?

I leave it there full time, but no it is designed to make fruit roll ups. i thought it would be good to catch drips, but no drips yet. also, theres some nice silicone mesh options on amazon if you are doing small stuff like blueberries.

#6 It only comes with one mesh screen...is it possible to get five more?

Not sure, but I actually just use parchment paper on the regular racks...works just as good for smaller items than can fall through the holes but probably not if you're making fruit leather.
