Yes you do have to turn it over halfway in between if you want it to be cooked evenly on both sides. Unless you throw it in the rotisserie Cage which automatically rotates the food

You have to choose item you are going to cook and press temp. to choose. You should have a chart that tells you temp. for each item. Like fries, chicken, toast, vegetables etc.
