you should use a recipe that has yeast in the batter for an excellent rise and restaurant type flavor. I never knew that and could never figure out why my waffles used to always be flimsy and lacking in flavor. I always use this type and let the batter rise in the refrigerator overnight. It's very convenient to only have to take it out in the morning and bake.
