#1 Am I doing something wrong? Put in pan, flipped switch downwards. But the cook lights been stuck on that one, rice has been cold after 2 hours?

I think the procedure is fine. The pot can continue to keep the heat of the rice for much more than 2 hours. My suggestion is to contact the seller.

#2 Can I steam the food without the basket?

No the basket is necessary to steam food. The water is in the metal bowl under it, so if you don’t have the basket, the food cooks in the water, in the metal bowl, as when you cook rice.

#3 If you purchase a 6, 8, or 10 capacity rice maker do you always have to make that amount or can you cook less?

You can cook less. Most time the rice I put in just covers the bottom of the rice cooker. I think it is a pretty good rice cooker.
