#1 Since this model does not come with a probe, does GE have a probe accessory that can be purchased for use with this model?

We have a Digital Thermometer/Timer that can be purchased through our GEA Parts & Accessories Store. The part number is WX63x101.

#2 How does the convection fan work on this model? When does it first come on? Then, does it stay on while cooking? Or is it intermittent? if intermittent, When the oven is set to 450 for example, how long does it come on and then off for?

The convection fan runs at 2 speeds (low and high) on convection bake. The fan will only run when the bake burner is off during the convection bake (the fan does not run when the bake burner is on – calling for heat). On gas ranges, the fan begins once preheating has been completed, and it will cycle off each time the unit calls for heat. Specific times are not available. The convection fan does not run when the door is opened. When convection baking: The Bake burner is off (bottom burner) The fan operates at its low-speed setting This gently circulates air through the oven cavity. When convection roasting: The Bake burner is off (bottom burner) The fan operates at its high-speed setting. This faster air circulation browns meat perfectly and cooks meat up to 25% faster than a conventional oven

#3 Does the model JGB870 double oven come with a gas control lockout? I am worried that my nephews will start messing with the controls and accidentally turn the gas on

You can lock the control panel so that pressing the pads does not activate the controls. There is not a way to lock the gas knobs to prevent turning though
