2. This appliance produces heat. Do not

3. Remove all packaging plastic and
other materials and discard or recycle
properly prior to using appliance.

not immerse cord, plug or appliance
itself in water or other liquids.
6. Close supervision is necessary when
appliance is used near children.
7. Unplug from outlet when not in use

IMPORTANT SAFEGUARDS (cont.)
24. The electrical component is equipped
with a safety heat switch, which
ensures that the heating element
can only function when the element
is correctly placed on the deep fryer
body.
25. The oil level must always be between
the MIN and MAX markings.
26. EXTREME CAUTION must be used
when moving deep fryer containing
hot oil.
27. If the fryer has a removable pot, never
remove it while the deep fryer is on.
28. Be sure that handles are properly
assembled to basket and locked
into place. See detailed assembly
instructions.
29. The cooking times are given as
guidelines only.
30. The oil must be ltered regularly and
changed after 8 to 12 uses.
31. If you use solid vegetable shortening,
cut it into pieces and melt it over slow
heat in a separate pot beforehand,
then slowly pour it into the deep fryer
pot. Never pour shortening directly
into the deep fryer pot or basket as
this will lead to deterioration of the
appliance.
32. Before you use the deep fryer it must
be lled with the required amount of
oil or liquid fat. **Never use the deep
fryer without oil or liquid fat as this
may damage the unit.

the fry basket with food. This may
cause the hot oil to displace and rise &
spill out of the oil tank.

thermal safety device which switches
the machine off automatically if it
over heats.

SHORT CORD PURPOSE
POLARIZED PLUG
If the plug still does not t, contact a
qualied electrician. Never use the plug
with an extension cord unless the plug
can be fully inserted into the extension
cord. Do not alter the plug of the
product or any extension cord being
used with this product. Do not attempt
to defeat the safety purpose of the
polarized plug.
If this appliance is equipped with a
polarized plug (one blade is wider than
the other), please follow the below
instructions:
To reduce the risk of electrical shock,
this plug is intended to t into a
polarized outlet only one way. If you
are unable to t the plug into the
electrical outlet, try reversing the plug.
If an extension cord is used: (1) the
marked electrical rating of the extension
cord should be at least as great as the
electrical rating of the product; (2) the

that it will not drape over the counter

Reset Function: Your new Deep Fryer is equipped
with an Auto-shut Off Safety Feature. In the unlikely
event that the unit overheats, the Thermal Protec-
tive Switch will automatically turn the deep fryer off.

BEFORE FIRST USE
1. Remove all printed documents and packaging materials
and recycle or discard of properly.
2. Pull out all removable parts (except the power head/
heating element) and gently wash with warm soapy water.
Dry all parts thoroughly before assembling.
3. Do not operate the fryer without enough oil in the oil tank.
4. The Deep Fryer should always be placed on a at, level,
dry and stable surface where the power cord is out of
reach from children and safe from pulling or accidental
entanglement.
NOTE:
Do not immerse
the Power Cord or
Control Box/Power
Head Assembly in any
liquids. The Heating
Elements are the only
part of the Deep Fryer
that is immersed in oil.
TIPS:
1. When you fry several different kinds of food, always fry the
food that uses the lowest temperature setting rst.
2. Do not mix different types of oil for frying.
3. Frying already pre-cooked foods may take less time to fry
than completely raw food.
4. Replace the oil after each 8-12 uses or earlier if the oil
becomes brown and thick.
WARNINGS:
1. THIS DEEP FRYER IS ONLY SUITABLE FOR USE WITH OIL
OR LIQUID FAT AND NOT SOLID FAT. IF SOLID FAT IS USED,
WATER CAN BECOME TRAPPED INSIDE AND THE HOT FAT
MAY SPEW OUT WITH CONSIDERABLE FORCE.
2. Never switch on the deep fryer without oil or liquid fat,
as this could damage the machine. Also, do not place any
other liquids such as water or other substances in the pan.
3. Place the deep fryer on a at, level, dry and stable surface.
Since the deep fryer becomes hot during use, make sure
that it is not too close to other objects.

HOW TO USE
ASSEMBLY:
1. Make sure the Deep Fryer is unplugged when assembling.
2. Make sure the temperature control knob is set to the 0
position.
3. Place main body on a at, dry, level and stable surface.
4. Insert oil tank into main body.
5. Align grooves of Control Box with grooves found on the
main body. This will properly engage the Safety Switch
and ensure proper activation. Push down rmly to secure.
If Safety Switch is not properly engaged, the unit will not
power on.
MAKE SURE TO ENGAGE THE
SAFETY SWITCH:
During assembly, make sure
the control box is secured
properly to the slots on the
back of the body frame. This
will properly engage the safety
switch and ensure proper
activation. Otherwise the fryer
will not power on
6. Fill Oil Tank with oil making sure that it does not surpass
the MAX ll line. For best results we recommend
vegetable oil.
7. To assemble handle to wire basket, squeeze tines of han-
dle together and insert into bracket of the wire basket.
8. Place wire basket into oil tank and allow it to hang and rest
on the front side of the oil tank.
• Your new deep fryer comes with 2 frying baskets.
• The two baskets can be used simultaneously if frying
multiple foods at once.
NOTE:
The oil level should
always be between
the MIN and MAX
level of the Oil Tank.

HOW TO USE (cont.)
OPERATION:
1. Attach the magnetic power cord to the socket on the back
of the control box.
2. Plug the power cord into a 120 volt outlet.
3. Rotate the Temperature knob to desired temperature.
The RED and the GREEN indicator light will turn on. The
Temperature knob must be rotated and turned on to
initiate power to the deep fryer.
4. While the oil is preheating, prepare the food that is going
to be fried.
5. When the selected temperature has been achieved, the
green Heat indicator will turn off.
6. When placing the food into the basket, make sure it is as
dry as possible. Do not add water, ice or wet food, it may
cause HOT OIL SPLATTER.
7. When frying frozen food, clear off any ice particles and
thaw food thoroughly.
8. Do not overll the basket.
9. Lower basket(s) of food into hot oil and cover fryer with lid.
10. Remove foods immediately after desired cooking time has
elapsed and allow to drain. Removing foods and draining
as soon as done/time has elapsed will prevent foods from
absorbing additional oil.
CAUTION:
Do not touch the
control knob during
the frying process.
Hot steam may be
released and may
cause injury.
NOTE:
During the frying
process, the oil
temperature may drop
when adding new
food to be fried. The
green HEAT indicator
will periodically turn
On and Off letting
you know that the
deep fryer is heating
to maintain selected
temperature.
No matter what the
recipe, food must be
dried thoroughly
before frying.
Otherwise, the
moisture may cause
foaming of the oil and
overowing.

When Resetting the Deep Fryer, use Extreme Caution keeping
in mind that the heated oil is very hot and can cause injury.
RESET BUTTON:
• If your deep fryer’s heating element shuts off during the
cooking cycle and doesn’t automatically come back on,
turn the knob to 0 position and unplug the unit from
the wall outlet and allow to cool for 10 minutes. Plug the
power cord back into the wall outlet, turn the knob to
desired temperature to turn unit on.
• If the deep fryer still does not power on, turn knob to 0
and unplug from electrical outlet.
• Locate the Reset Button on the back of the Control Box
(see page 5. parts identication). The Rest Button is
located inside a small hole. Use a small, thin tool to put
in the hole and press the Reset Button and HOLD for 3
Seconds.
• After resetting the thermal switch, plug the power cord
into an electrical outlet and power on by rotating the
temperature knob to desired temperature.

AFTER THE FOOD IS FRIED:
1. Make sure to turn the temperature control knob to the ‘0’
position.
2. Once food is done cooking, remove the lid, and hang the
basket(s) on the hook and let any excess oil drip into the
oil pot.
3. Remove the basket(s) and place the food on paper towels
to absorb excess oil. Do not touch the basket(s) while still
hot. Always use the handle.
4. Transfer food to a clean dish without the paper towels.
5. Place the basket(s) into the deep fryer.
6. If you are frying more than one batch, ensure the oil
re-heats to the required temperature.
7. When frying is complete, turn control to 0 position.
8. Unplug the power cord from the electrical outlet. Allow
the machine and the oil to cool completely before
attempting to move or clean.
CAUTION:
Removing the lid will
release hot steam.

CLEANING & MAINTENANCE
1. Remove the lid and baskets.
2. Wait for the deep fryer and oil to cool completely. Remove
control box & heating assembly by lifting straight up and
out of the aligning slots on the deep fryer body.
3. Carefully remove the Oil Pot/Reservoir and properly store
the oil for future use or dispose of in accordance with
proper oil disposal protocol.
4. After removing the oil pot, the fryer can be divided into
separate components to clean.
5. The oil pot and main body can be immersed in water to
clean.
6. Do not use abrasive scrubbing brushes or chemical
cleaners to clean the unit. The Control Box & Heating
Element should be wiped with a clean absorbent cloth or
paper towels to remove oil. Then use a warm damp cloth
and a mild soap to clean.
7. Dry all parts thoroughly.
CAUTION:
Before cleaning the
deep fryer, make sure
that it is disconnected
from the power outlet,
make sure the unit
and the oil have
completely cooled.
Oil retains its
temperature for a long
period after use. Do
not attempt to carry
or move the deep
fryer while the oil is
hot.
NOTE:
Filters can be gently
rinsed in warm soapy
water as well and
reused again. But it
will need to be
replaced after
considerable use.

HOW TO REPLACE THE FILTERS:
Your carbon lter (black piece) should be changed every 6
months. The oil lter (white piece) should be changed every 12
months.
1. Unclip and remove the lter cover.
2. Take out both white and black lter pieces.
3. Throw out old lters and replace with new lters. Make
sure the White lter piece rests on the metal surface
BELOW the carbon lter (black piece).
STORING YOUR DEEP FRYER:
Always allow the appliance to cool completely before storing.
Store the appliance in a dry location. Keep the power cord out
of reach of children.

RECIPES
BATTER VARIETY:
The following are a few quick recipes with different types of batter to use with a
variety of foods to fry up in the deep fryer for a delicious meal.
• Beer Batter
Mix together 1 ½ cups of our and 1 ½ cups of any kind of beer in a large
mixing bowl. Cover the bowl after mixing and allow the batter to sit at room
temperature for approximately 3 hours. When ready to fry, dip desired food
into the batter and follow the directions for frying battered foods in this
booklet.
• Egg Batter
Combine 2 egg yolks, ¾ cup of our, 1-½ teaspoons of vegetable oil, ½
teaspoon of salt and 1 cup of milk. Mix thoroughly. Add more milk if desired to
adjust the density of the mixture. When ready to fry, dip desired food into the
batter and follow the directions for frying battered foods in this booklet.
• Egg Coating
Combine 2 whole eggs with 1-½ teaspoons of vegetable and a pinch of salt
and pepper to taste. When ready to fry, dip desired food into the mixture and
follow the directions for frying foods in this booklet.
• Extra Crispy Coating
Beat together ½ cup milk and one whole egg in a small mixing bowl. In a
separate bowl, mix together ½ cup of our and any of your favorite seasonings
such as salt, pepper, chili powder, garlic powder, etc. When read to fry, dip
desired food into the wet mixture rst, then dip into the dry our mixture. Then
follow the directions for frying foods in this booklet.
• Bread Crumb Coating
Beat together 1 ½ teaspoons of vegetable oil and 2 egg yolks in a small mixing
bowl. In a separate bowl, mix together ½ cup of bread crumbs, 1/3 cup of our
plus any of your favorite seasonings such as salt, pepper, chili powder, garlic
powder, etc. When read to fry, dip desired food into the wet mixture rst, then
dip into the dry bread crumb mixture. Then follow the directions for frying
foods in this booklet.
TIPS FOR FRYING BATTERED FOODS:
• Make sure food is always sliced thinly and evenly. This helps the food to be
fried evenly.
• Shake off any excess our or bread crumb coating to prevent any clumps from
forming when frying.
• If you wish to use the basket when frying foods coated with batter, it is
recommended to lower the basket into the hot oil rst and then gently and
carefully place battered foods into the oil directly. This will prevent the batter
from catching and sticking to the wiring of the basket.
• Never ll the basket more than 2/3 full. In order to cook evenly, the food needs
space for the frying oil to fry each side.

APPETIZERS
RECIPES
1. In the deep fryer, heat oil to 375°F degrees.
2. Combine the cornmeal, our, sugar, mustard, baking powder and salt, mixing well.
3. Add the milk, egg and shortening, mixing until very smooth.
4. Pour the mixture into a tall glass. Put hotdogs/frankfurters on sticks.
5. Dip them into the cornmeal batter to coat them evenly.
6. Deep fry in oil until golden brown, about two to three minutes.
7. Drain on paper towels.
½ cup yellow corn meal ½ cup our
¼ tsp. dry mustard
1/2 tsp. salt
1 egg, lightly beaten
CORN DOGS
(Makes 6 Servings)
PREP TIME: 10 minutes
6 hot dogs/frankfurters
6 skewers/sticks
1 tbsp. sugar
1 tsp. baking powder
Preheat Temperature: 375°F | Cook Time: 2-3 minutes
½ cup milk
1 tbsp. melted shortening
1. In the deep fryer, heat oil to 375°F degrees.
2. Cut off tips and separate wings at joint; sprinkle with salt and pepper, to taste.
3. Add 12 wings and cook 10 minutes, ipping occasionally.
4. When wings are golden brown and crisp, remove and drain well. Add rest of wings;
repeat process.
5. Meanwhile, melt butter in saucepan; add hot sauce, to taste and vinegar. Pour sauce
over wings and mix well to cover.
6. Serve with Blue Cheese Dressing and celery sticks.

BUFFALO WINGS
(Makes 4 Servings)
PREP TIME: 15 minutes
¼ cup butter
2-5 tsp. hot sauce (to preferred taste)
1 tsp. white vinegar
Preheat Temperature: 375°F | Cook Time: 5 minutes
1. In the deep fryer, heat oil to 375°F degrees.
2. In a large bowl, mix together our, salt, baking powder, and dill.
3. Add beer, milk, and eggs; mix well.
4. Place sh llets in batter mixture, coat well, and let stand for 15 minutes.
5. Place sh in hot oil, and fry until golden brown (5-8 minutes).
6. Cook sh in batches to maintain oil temperature. Serve.

APPETIZERS
1. In the deep fryer, heat oil to 350°F degrees.
2. Cut tomatoes into almost ½ inch thick slices.
3. Mix our, salt, pepper and seasoning salt in one bowl.
4. Mix eggs and milk in another bowl. Dip each tomato slice into the milk mixture, then
into the our, back to the milk and then to the our again, coating well.
5. Add battered tomato slices a few at a time, and cook for 5 to 6 minutes or until
golden brown.
3-4 large green tomatoes

FRIED GREEN TOMATOES
(Makes 4 Servings)
PREP TIME: 15 minutes
1 tbsp. seasoning salt
2 eggs
2 cups milk
2 quarts vegetable oil for frying
Preheat Temperature: 350°F | Cook Time: 5-6 minutes
1. In the deep fryer, heat oil to 375°F degrees.
2. Slice onions ¼ inch thick and separate into rings.
3. Combine remaining ingredients in a bowl and stir just until dry ingredients are
moistened.
4. Dip onion rings into our mixture.
5. Fry several at a time in a deep fryer until golden brown (about 5 minutes). Drain on
paper towel and sprinkle with salt.

GOLDEN FRIED ONION RINGS
(Makes 4 Servings)
PREP TIME: 10 minutes
½ tsp. salt
1 egg, slightly beaten
Preheat Temperature: 375°F | Cook Time: 5 minutes
1 cup milk
1. In the deep fryer, heat oil to 350°F degrees.
2. Heat heavy 6-inch skillet until drop of water will sizzle. Grease lightly with corn oil
before cooking each skin. Hold skillet off heat; pour 2 to 3 tablespoons batter into
pan, moving and tilting pan while pouring. Pour excess back into bowl of batter;
return skillet to heat. Batter will set very quickly.
3. Cook just until set and edge curls slightly. Turn out onto dry kitchen towel until ready
to roll.
4. Place about 2 tablespoons lling in center of each skin; brush edge with remaining 1
beaten egg. Fold nearest edge over lling; fold over sides about 1 inch. Roll skin; seal
with beaten egg.
5. Pour enough of remaining corn oil into deep fryer to ll to minimum required
amount.
6. Add several egg rolls slowly into deep fryer; fry until lightly browned on all sides,
turning as needed.
7. Drain on absorbent paper. Repeat with remaining rolls. Yield: 15 egg rolls.

Preheat Temperature: 375°F | Cook time: 5 to 8 minutes
Skin: Combine our, 1-cup water and 2 eggs. Beat at low speed of electric mixer
for 5 minutes. Set aside for at least 15 minutes.
Filling: Mix shrimp, celery, bamboo shoots, water chestnuts, onion, 2 tablespoons
corn oil and seasonings thoroughly.

MAIN COURSES
1. In the deep fryer, heat oil to 350°F degrees.
2. Combine marinade ingredients in a small bowl. Add chicken, mix well. Let stand 30
minutes.
3. Combine batter ingredients in a medium bowl until just mixed. Do not stir to blend.
4. Combine sweet and sour sauce, chicken broth, water and cornstarch in a bowl, set
aside.
5. While oil is heating, coat each piece of chicken with batter. Reduce heat to medium.
6. Carefully lower coated chicken into hot oil with fryer basket.
7. Deep fry chicken 3 minutes or until browned. Remove from oil.
8. Turn heat up to high and heat oil to 400 degrees.
9. Carefully place chicken all at once in hot oil and deep-fry until crisp, about 30
seconds.
10. Remove chicken, draining well. Place on platter.
11. Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden
brown, turning once, about 2 minutes on each side. Drain on paper towels.
12. Mix sugar and the optional cinnamon; roll churros in sugar mixture.
MARINADE:

BATTER:
½ cup chicken coating mix
½ cup ice water

SWEET & SOUR CHICKEN
(Makes 4 Servings)
PREP TIME: 40 minutes
SWEET AND SOUR SAUCE:
½ cup Sweet and Sour Sauce
(your choice)
¼ cup chicken broth
¼ cup water

1 green pepper, cut into 1-inch

Preheat Temperature: 350°F | Cook Time: 3-4 minutes
1 medium carrot, sliced inch
long then lengthwise
½ cup sliced water chestnuts
1 can chunk pineapple
2 quarts vegetable oil for frying
1. In the deep fryer, heat oil to 365°F until ready
2. In a medium bowl, beat together ½ cup milk and egg.
3. In a re-sealable plastic bag, mix together the our, garlic salt, paprika, pepper and
poultry seasoning.
4. Place chicken in bag, seal, and shake to coat. Dip chicken in milk and egg mixture,
then once more in our mixture. (Save any remaining our mixture.)
5. Place coated chicken in the hot oil, and brown on all sides. Reduce heat to 325°F, and
continue cooking chicken until tender, about 30 minutes. Remove chicken from fryer,
and drain on paper towels.
6. Remove 2 tablespoons of the frying oil from deep fryer and place into a saucepan
over low heat. Stir in 2 tablespoons of the saved our mixture. Stirring constantly,
cook about 2 minutes. Whisk in chicken stock.
7. Stir in 1 cup milk, and bring all to a boil over high heat, stirring constantly. Reduce
heat to low, and simmer for about 5 minutes.
8. Serve immediately with the chicken.

FRIED CHICKEN WITH CREAMY GRAVY
(Makes 4 to 6 Servings)
PREP TIME: 15 minutes
¼ tsp. poultry seasoning
1 (4 lbs.) whole chicken, cut into pieces 3
cups vegetable oil
3 cups vegetable oil
1 cup chicken broth
1 cup milk

DESSERT
1. In the deep fryer, heat oil to 350°F degrees.
2. Meanwhile, combine our, sugar and nutmeg, set aside. In medium saucepan heat
water or milk, butter and salt over medium heat until boiling and butter is melted.
Add vanilla, then add our mixture all at once.
3. Stir briskly with a wooden spoon until mixture leaves sides of pan and forms a ball.
Continue stirring a few minutes more until dry.
4. Remove from heat and beat until slightly cooled.
5. Add eggs, one at a time, beating well after each addition. Using 2 spoons, shape a
generous tablespoon of dough into an oblong and drop into hot oil.
6. Fry 3 or 4 at a time, turning beignets as they rise to the surface. Fry 3 to 4 minutes,
until golden brown.
7. Drain on paper towels and sprinkle immediately with sifted confectioners’ sugar.
Repeat with remaining batter.
8. Makes approximately 2 dozen Beignets.
Vegetable oil for frying

BEIGNETS
(Makes 4 to 6 Servings)
PREP TIME: 15 minutes
¼ tsp. nutmeg
1 cup water or milk
1/3 cup butter
Preheat Temperature: 365°F | Cook time: 3 to 4 minutes
¼ tsp. salt
1 tsp. vanilla extract
4 eggs, at room temperature
1. In the deep fryer, heat oil to 360°F degrees.
2. To make churro dough, heat water, margarine and salt to rolling boil in 3-quart
saucepan; stir in our.
3. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove
from heat.
4. Beat eggs all at once; continue beating until smooth and then add to saucepan
while stirring mixture.
5. Spoon mixture into cake decorator’s tube with large star tip.
6. Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden
brown, turning once, about 2 minutes on each side. Drain on paper towels.

¼ cup sugar
¼ tsp. ground cinnamon
2 quarts vegetable oil for frying
Preheat Temperature: 360°F | Cook time: 4-5 minutes
1. In the deep fryer, heat oil to 375°F degrees.
2. Combine all the above ingredients in order. Mix thoroughly.
3. Put batter in funnel (be sure to cover hole with one nger), then, holding the funnel
over hot oil (be very careful!), release some of the batter in circular motion, then
criss-crossing motions to form one funnel cake.
4. The funnel cake will rise quickly and expand - so be careful how much batter you use.
5. Cook to light golden brown on both sides. *Be careful, funnel cakes cook fast, 15-30
seconds on each side*
6. Remove from oil and place on paper towels.
7. Sprinkle with powdered sugar and serve warm.

breach of any express or implied warranty. Apart from the extent prohibited by applicable law,
any implied warranty of merchantability or tness for a particular purpose is limited in time to

RETURNS:
A. Any return of defective merchandise to the manufacturer must be
processed accordingly by rst contacting customer service to obtain an
RA # (Return Authorization Number). We will not accept any returns of
merchandise without an applicable RA #.
B. IMPORTANT RETURN INSTRUCTIONS. Your Warranty depends on your
following these instructions if you are returning the unit to Maxi-Matic,
USA:
1. Carefully pack the item in its original carton or other suitable
box with sufcient cushioning to avoid damage in shipping.
2. Before packing your unit for return, be sure to enclose:
a) Your name, full address with zip code, daytime telephone
number, and RA#,
b) A dated sales receipt or PROOF OF PURCHASE,
c) The model number of the unit and the problem you
are having (Enclose in an envelope and tape directly to
the unit before the box is sealed,) and
d) Any parts or accessories related to the problem.
3. Maxi-Matic, USA recommends that you ship the package via UPS
ground service for tracking purposes. We cannot assume
responsibility for lost or damaged products returned to us
during incoming shipment. For your protection, always carefully
package the product for shipment and insure it with the carrier.
C.O.D shipments cannot be accepted.
4. All return shipping charges must be prepaid by you.
5. Once your return has been received by our warehouse, Maxi-Matic,
USA will repair or replace the product if it is defective in material or
workmanship, subject to the conditions in paragraph B.
6. Maxi-Matic will pay the shipping charges to ship the repaired or
replacement product back to you.
