RECIPES
1. In the deep fryer, heat oil to 375°F degrees.
2. Combine the cornmeal, our, sugar, mustard, baking powder and salt, mixing well.
3. Add the milk, egg and shortening, mixing until very smooth.
4. Pour the mixture into a tall glass. Put hotdogs/frankfurters on sticks.
5. Dip them into the cornmeal batter to coat them evenly.
6. Deep fry in oil until golden brown, about two to three minutes.
7. Drain on paper towels.
½ cup yellow corn meal ½ cup our
¼ tsp. dry mustard
1/2 tsp. salt
1 egg, lightly beaten
CORN DOGS
(Makes 6 Servings)
PREP TIME: 10 minutes
6 hot dogs/frankfurters
6 skewers/sticks
1 tbsp. sugar
1 tsp. baking powder
Preheat Temperature: 375°F | Cook Time: 2-3 minutes
½ cup milk
1 tbsp. melted shortening
1. In the deep fryer, heat oil to 375°F degrees.
2. Cut off tips and separate wings at joint; sprinkle with salt and pepper, to taste.
3. Add 12 wings and cook 10 minutes, ipping occasionally.
4. When wings are golden brown and crisp, remove and drain well. Add rest of wings;
repeat process.
5. Meanwhile, melt butter in saucepan; add hot sauce, to taste and vinegar. Pour sauce
over wings and mix well to cover.
6. Serve with Blue Cheese Dressing and celery sticks.

BUFFALO WINGS
(Makes 4 Servings)
PREP TIME: 15 minutes
¼ cup butter
2-5 tsp. hot sauce (to preferred taste)
1 tsp. white vinegar
Preheat Temperature: 375°F | Cook Time: 5 minutes
1. In the deep fryer, heat oil to 375°F degrees.
2. In a large bowl, mix together our, salt, baking powder, and dill.
3. Add beer, milk, and eggs; mix well.
4. Place sh llets in batter mixture, coat well, and let stand for 15 minutes.
5. Place sh in hot oil, and fry until golden brown (5-8 minutes).
6. Cook sh in batches to maintain oil temperature. Serve.

3/4 cup beer
½ cup milk
2 eggs
