#1 How do you turn off the open door alarm when the door is opened too long?

We appreciate your interest in this refrigerator and its options. According to page 23 of your owner’s manual, when power is connected to the refrigerator, the door alarm is initially set to ON. When you press the DOOR ALARM button, the display will change to OFF and the Door Alarm function will deactivate.

#2 The water dispense is very slow takes forever to fill a glass, is there any way to speed it up

We regret the trouble you have experienced with this refrigerator and its features. The refrigerator itself has no functions or adjustments available to speed the water flow to the dispenser. It may be possible to increase the water flow by opening the water valve more. If this does not resolve the matter, then it will not be possible to increase the speed of the dispenser.
