#1 Could the phone fall off? Specifically the magnets separating? My concern is mainly if I was shooting a roller from the bed of a moving truck

With just vibration? No. but if you hit the phone hard enough against something, or if someone knocks into your phone then it can absolutely fall off. It happened to me and scuffed my screen (despite my case). You just have to take care with getting too close to things.

#2 Is it compatible with note 20 ultra?

Samsung Note 20 Ultra is not listed on the compatibility list, the full compatibility functions may not be assured.
