#1 does this model include split racks for multiple cooking?example: half side chicken, other half lasagna?

It certainly does. This range features a flexible racking system that adjusts to cook multiple dishes at once. You can even remove the half rack to create extra height for tall dishes.

#2 how do you clean the rough cast iron grates and burner covers?

Below are instructions to clean the burners and grates of this range: To clean burner grates: • Clean when the grates are cool. • Use nonabrasive plastic scrubbing pad and mild abrasive cleanser. • Food soils containing acids may affect the finish. Clean immediately after the grates are cool. • Thoroughly dry grates immediately following cleaning. To clean burner caps the ignition port: • Remove caps from burner heads after they have cooled. • Clean heavy soils with a plastic scrubbing pad and absorbent cloth. • Thoroughly dry burner caps immediately following cleaning including the bottom and inside of cap. • Do not use abrasive cleaners. They can scratch porcelain. • Do not clean burner caps in the dishwasher. • Do not operate surface burners without burner caps properly in place.

#3 Temperature probe??According to the manufacturer's website and other big-box stores, this model comes with a temperature probe that plugs into the inside of the oven for easy temperature-sensing of any large meats - meatloaf, turkey, etc. Can someone verify? I don't see the probe-sensor button on these screenshots either. See attached images for what I'm talking about...

Range model FGGF3054MB does in fact include a temperature probe that will allow you to read more accurately when your desired temperature has been reached.
