#1 Does one set the timer, and the unit turns off for six hours, whereupon it begins to heat up to reach the set temperature?

Yes, when using the 6 Hour Timer, the unit turns off and then 6 hours later the timer will turn off and the water will begin to heat up until it starts to boil. When the water is brought up to boiling temperature, it will then be kept warm at 194 degrees F. Enjoy!

#2 Is it normal that it makes noise while just sitting there? I’ve got plenty of water in it, it just makes noise off and on. I had a smaller version of?

When the water is boiling, you will hear a noise. I had the similar situation. Now I stick the temperature to 190 degree and everything is fine.

#3 I still do not know if the interior is stainless steel or not. If not, then is it better, one less good than stainless steel? Any insight?

It is not stainless steel. It appears to be some sort of dark grey (almost black) coating similar to Teflon. I have used this item for some time now (months for this one and years for another smaller model) and have never seen any flaking or de-lamination of the coating. It is probably better, because the heat and moisture might cause discoloration of stainless.
